Pad Thai is a classic Thai dish that is both easy to make and incredibly delicious. This chicken version is perfect for a quick and satisfying dinner at home.
Ingredients
- 250 g dry rice noodles
- 300 g chicken fillet, cut into small pieces
- 3 cloves garlic, finely chopped
- 2 onions, sliced
- 1 bell pepper, sliced
- 150 g beans or broccoli
- 3 eggs
- 3 tbsp tamarind paste or lime juice
- 3 tbsp fish sauce
- 2 tbsp palm sugar or sugar
- 2 tbsp vegetable oil
- Chilli to taste
- Peanuts and fresh coriander for garnish
Instructions
Step 1: Cook the rice noodles according to package directions. Drain and set aside.
Step 2: Heat the oil in a wok or large frying pan over high heat. Cook the chicken until cooked through, about 5-7 minutes. Remove from the pan and set aside.
Step 3: In the same pan, sauté the garlic for 30 seconds until fragrant. Add the onion, bell pepper, and beans. Cook for 3-4 minutes until the vegetables are tender.
Step 4: Push the vegetables to the side of the pan. Crack the eggs directly into the pan and stir until cooked. Mix with the vegetables.
Step 5: Add the cooked noodles and chicken back to the pan. In a small bowl, mix the tamarind paste, fish sauce, and sugar, then pour over the noodles. Toss everything together until well combined.
Step 6: Season with chili and optionally more fish sauce or lime juice to taste.
Serving
Serve Pad Thai on plates and top with crushed peanuts, fresh coriander, and lime wedges. A delicious and authentic Thai experience in just 20 minutes!
