Which noodles for pho? Flat rice noodles, ideally 3–5 mm. They should be soft and slightly slippery, not firm like pasta.

How do I use rice paper? Dip the sheet quickly in lukewarm water until it just softens – it carries on softening while you roll. Put the filling at the bottom and roll tightly.
