Thailand 🇹🇭
Thai food balances four things against each other: salty, sweet, sour and hot. If you can get hold of fish sauce, lime juice, palm sugar and chilli, you have the basis for most of it. At FUDI you will find both the staples and the ready-made pastes.
Popular Thai brands
Aroy-D – coconut milk and curry paste, red, green, panang and massaman. Mama – the instant noodles that are an institution in Thailand. Lobo – spice blends and ready mixes for pad thai and tom yum. Maekrua and Megachef – oyster sauce and fish sauce. Mogu Mogu – drinks with the bits in.
Frequently asked questions
Which curry paste is the hottest? Green is usually the hottest, red sits in the middle, and massaman and panang are the mildest and roundest of them.
How much fish sauce should I use? Less than you think. It is very salty, and a couple of teaspoons lift a whole stir-fry. It smells strong in the bottle, but turns round in the dish.
