What is kecap manis? Soy sauce with palm sugar added, which makes it as thick as syrup and clearly sweet. It is used for nasi goreng, satay and as a dip – not as an ordinary soy sauce.
What is sambal oelek? Coarsely ground fresh chilli with salt and a little vinegar, and nothing else. Plain heat, which you can build on.
