What's the difference between polvilho doce and azedo? Both are cassava starch. Doce is sweet and gives a denser, chewier result. Azedo is soured and gives airier baking – it's the one for pão de queijo.
What is farofa? Toasted cassava flour, often seasoned with garlic and onion. Sprinkled over rice and beans for crunch.
