Why make your own hummus?

What you'll need
- 1 can chickpeas (approx. 400 g)
- 3 tbsp tahini
- Juice of 1 lemon
- 1 clove garlic
- 3 tbsp good olive oil
- A pinch of cumin and salt
- Ice water as needed
Instructions
- Rinse the chickpeas well. For an extra creamy result, rub off the thin skins.
- Process tahini and lemon juice in a food processor for one minute, until light and airy.
- Add garlic, salt, and cumin.
- Add the chickpeas and process until a smooth paste forms.
- Add ice water one spoon at a time while the machine is running, until the hummus is silky smooth.
- Season with more lemon or salt to taste.
The secret to creamy hummus
Two tricks make all the difference. The first is to whip tahini and lemon juice together before adding the chickpeas; this creates an airy base. The second is the ice water, which emulsifies the hummus and makes it incredibly smooth. Don't be afraid to let the machine run for a long time.
Serving
Pour the hummus into a bowl, create a swirl with a spoon, and fill the indentation with olive oil. Sprinkle with paprika, cumin, or whole chickpeas, and garnish with some fresh parsley. Serve with warm pita bread or fresh vegetables.
Variations
Once you've mastered the basic recipe, you can experiment. Try adding oven-baked beetroot for color, roasted bell pepper for sweetness, or extra garlic and chili for a kick. The possibilities are almost endless.
