What do I use jarred grilled peppers for? They are already grilled and peeled – perfect in salads, as meze with a little olive oil and garlic, or in sauces and casseroles where you want a sweet, roasted pepper flavour.

What is the difference between fine and medium bulgur? Fine bulgur is used in salads such as kısır and tabbouleh, while medium is boiled as a side dish and for pilav. Both are quick to prepare.

What is the difference between tomato puree and passata? Tomato puree is heavily reduced and used in small amounts for depth. Passata is sieved, uncooked tomatoes and is used as the base itself in sauces and casseroles.
