Eaglobe Szechuan Peppercorns 57g
Eaglobe Sichuan Pepper 57g is the famous Chinese spice with a character all of its own, tingling and lightly citrus-like. Sichuan pepper is not really hot – instead it gives the distinctive, tingling 'mala' sensation on the tongue that defines the cooking of Sichuan province, often alongside dried chilli.
Toast the husks lightly in a dry pan and crush them before use, and the aroma really opens up. Use them in mapo tofu, kung pao chicken, chilli oil and hot pot, or mix them with salt for a sprinkle over fried chicken. More authentic flavours can be found in the spice range.
