Lao Gan Ma Salted Black Beans are fermented black soybeans in chilli oil from the Chinese cult brand – a burst of umami with a deep, salty and aromatic Sichuan character. A small spoonful makes an enormous difference to the flavour. The jar holds 280 g.
Use it in a stir-fry with meat or vegetables, over steamed fish, or as a seasoning in the classic mapo tofu. It is also lovely stirred into noodles and fried rice. Silken tofu and more can be found in the tofu range.
