Tanghulu – How to Make the Viral Chinese Candy at Home

Tanghulu (糖葫芦) is candied fruit on a stick – juicy fruit covered in a thin, glass-clear sugar shell that crackles when you bite into it. It has been street food in Beijing for hundreds of years, but it's TikTok that has turned it into a global phenomenon. The best part? You only need three ingredients.

What You Need

  • Firm fruit: strawberries, grapes, mandarin segments, kiwi or pineapple – grapes and strawberries are the easiest to succeed with
  • 200 g sugar
  • 100 ml water
  • Wooden sticks or skewers
  • A cooking thermometer (highly recommended)

How to Make Tanghulu

  1. Prepare the fruit. Wash and dry the fruit COMPLETELY – moisture is the most common reason the sugar shell doesn't stick. Thread 2–3 pieces onto each stick.
  2. Cook the syrup. Put the sugar and water in a small saucepan. Don't stir once it has started boiling – that makes the sugar crystallize. Let it boil until it reaches 150 °C (the "hard crack" stage). No thermometer? Drop a little syrup into cold water – it should immediately harden into hard, brittle caramel.
  3. Dip the fruit. Tilt the saucepan and quickly roll the skewers in the syrup. Let the excess drip off.
  4. Cool. Place the skewers on baking paper or dip them in ice water for 2–3 seconds for an instant crack. Eat within a couple of hours – the sugar shell absorbs moisture and softens over time.

Why Tanghulu Fails (and How to Avoid It)

The sugar turns chewy instead of crisp: The syrup isn't hot enough – it needs to reach a full 150 °C. The sugar crystallizes: You stirred the pan while it was boiling. The shell doesn't stick: The fruit was wet. Dry it thoroughly, and preferably use fridge-cold fruit.
