The quesadilla is Mexican fast food at its simplest and best: a tortilla filled with cheese, pan-fried until golden and crispy on the outside and melted on the inside. Ready in ten minutes, loved by children, and perfect for using up leftovers.
Basic Recipe (2 pcs)
- 4 wheat tortillas (or corn tortillas for an authentic version)
- 200 g grated cheese that melts well
- A little butter or oil for frying
- Heat a dry or lightly greased pan over medium heat.
- Place one tortilla in the pan, sprinkle cheese over the entire surface, and place another tortilla on top.
- Fry for 2–3 minutes per side until the cheese is melted and the surface is golden and crispy.
- Cut into triangles and serve with salsa and guacamole for dipping.
Fillings that elevate the quesadilla
Cheese is mandatory – the rest is up to you: shredded chicken and bell peppers, black beans and corn, leftover taco meat, or mushrooms and spring onions. Remember the rule: don't overfill, and all fillings must be cooked before going into the quesadilla.
Tips for crispy quesadillas
Medium heat is key – too high heat will burn the tortilla before the cheese melts. Don't use a lid (it will make it soft), and let it rest for a minute before cutting so the cheese sets.
