Frequently asked questions
What is the difference between a corn tortilla and a wheat tortilla? The corn tortilla is the traditional one, made from nixtamalised maize. It is smaller, stands up to heat better and has a flavour of its own. The wheat tortilla is soft and neutral, and is used mostly for burritos.
Which dried chilli should I choose? Guajillo is mild and fruity and works in most things. Ancho is sweeter and darker. Chipotle is smoked jalapeño and gives both heat and a smoky flavour. The whole range is under dried chilli.
