What are bao buns?
Bao (or baozi) are Chinese steamed buns made from light, slightly sweet wheat dough. The variant most people know – the open, folded bun with filling – is called gua bao and comes from Taiwan. The dough is steamed instead of baked, and that's what gives it its characteristic soft, cloud-like texture.
How to steam bao buns
- Boil water in a pot or wok.
- Place the frozen buns in a steamer basket lined with parchment paper, with good spacing – they expand.
- Steam for 8–10 minutes until thoroughly heated, soft, and shiny.
- Serve immediately – bao is best piping hot and fresh.
No steamer basket? Place a plate on an inverted bowl in a lidded pot with a couple of centimeters of boiling water – or use a drip-proof colander over the pot with a lid on top. Microwave in an emergency: wrap the bun in damp kitchen paper and microwave in short intervals.

- Char siu-inspired pork – shredded pork in hoisin sauce, pickled cucumber, and spring onion.
- Crispy chicken – with sriracha mayonnaise and pickled red onion.
