Fajitas are Tex-Mex at its most social: sizzling strips of meat with peppers and onion, served straight from the pan with warm tortillas and toppings everyone helps themselves to. A perfect weeknight dinner – and a fresh alternative to Friday tacos.
Ingredients (serves 4)
- 600 g chicken fillet, flank steak or mushrooms
- 2 bell peppers in different colours and 1 large onion, cut into strips
- 8 wheat tortillas
- 2 limes
- Sour cream, guacamole and salsa for serving
Homemade fajita seasoning
Mix 2 tsp paprika, 1 tsp cumin, 1 tsp garlic powder, ½ tsp oregano, ½ tsp chilli powder and a pinch of salt – you'll find it all among our dried spices. Make a double batch and store the rest in a jar!
How to make it
- Cut the meat into strips and toss it in the spice mix with a little oil and the juice of one lime. Let it marinate for 15 minutes if you can.
- Sear the meat in a blazing-hot frying pan or cast-iron pan until it gets a good crust. Take it out.
- Fry the peppers and onion in the same pan until they are tender with a little bite.
- Return the meat to the pan, squeeze over the rest of the lime, and serve sizzling hot with warm tortillas.
Tips
The secret is high heat – the vegetables should get a little «char» without going soft. And always warm the tortillas, a few seconds per side in a dry pan.
