Step-by-step fried rice recipe

Step 1: Prepare the rice

If using fresh rice, let it cool completely before starting. Day-old rice works best as it is less moist. Whisk the eggs lightly in a bowl.

Step 2: Cook the egg first

Heat 1 tablespoon of oil in a large wok or frying pan over high heat. Pour in the eggs and scramble until cooked through. Remove and set aside.

Step 3: Sauté the vegetables

Add the remaining oil to the pan. Sauté the garlic and onion for 1-2 minutes until fragrant. Add bell pepper and frozen peas, and stir-fry for 2-3 minutes.
