Frequently asked questions

What's the difference between light and dark miso? Light miso is fermented for a shorter time and milder, good in soup. Dark is aged longer, saltier and more robust, and stands up better to marinades and stews.

Can I swap mirin for something else? Sugar dissolved in a little rice vinegar comes closest, but you lose the sheen mirin gives glazed dishes.
