Japan 🇯🇵

Everyday Japanese food rests on a few base flavours: soy sauce, miso, mirin and dashi. With those in the cupboard, you're never far from a proper ramen or a simple miso soup. At FUDI you'll find the staples and the noodles.

Popular Japanese brands

Kikkoman – soy sauce, brewed the traditional way. Nissin and AJ Oyakata – instant ramen and soba in Japanese editions. Hikari – miso in light and dark varieties. Kewpie – the mayonnaise with the characteristic tang. Yutaka – rice vinegar, mirin, nori and sushi equipment. Mizkan – rice vinegar.

Frequently asked questions

What's the difference between light and dark miso? Light miso is fermented for a shorter time and milder, good in soup. Dark is aged longer, saltier and more robust, and stands up better to marinades and stews.

Can I swap mirin for something else? Sugar dissolved in a little rice vinegar comes closest, but you lose the sheen mirin gives glazed dishes.
