Types of noodles

• Ramen – thin wheat noodles in broth; Japanese and Korean, mild to spicy.
• Instant noodles / instant – packet noodles ready in a few minutes.
• Cup noodles – instant noodles in a cup, just add water.
• Udon – thick, chewy noodles for soup and wok.
• Rice noodles – gluten-free noodles for pho and pad Thai.
• Soba – Japanese buckwheat noodles, hot or cold.
• Glass noodles – transparent noodles for japchae and salads.
• Gluten-free noodles – rice, mung bean and shirataki, checked against the ingredient list.

How to choose the right noodles

If you need a quick meal, choose instant ramen or cup noodles. If you're cooking from scratch, dried rice, udon, or egg noodles give the best result – cook them separately and stir them into the sauce or broth at the end. Frequently asked questions about noodles

What are noodles made of? Most noodles are made from wheat flour and water – ramen is added alkaline water for elasticity. Rice noodles are made from rice flour, soba from buckwheat, and glass noodles from mung bean or potato starch.

Is it healthy to eat noodles? Noodles are primarily a source of carbohydrates, and the nutritional content depends on what you serve them with. With vegetables, eggs, or meat, they become a complete meal – and the flavour packet in instant noodles can be dosed as desired.

Are noodles healthier than pasta? Nutritionally, wheat noodles and pasta are close relatives – both are made from wheat. The difference lies in their shape, cooking time, and what they are served with, not in their nutritional content.

Which noodles are gluten-free? Rice noodles, glass noodles and shirataki are naturally gluten-free. Ready instant portions may still have a seasoning sauce with wheat, so we've gathered the ones we've checked in gluten-free noodles. Always check the ingredient list on each package.

What is the difference between ramen and udon? Ramen are thin wheat noodles often sold as instant noodles, while udon are thick and chewy. Both are often served in hot broth.

What is the difference between instant noodles and regular noodles? Instant noodles are pre-steamed and ready in minutes in boiling water – most come in a pack with seasoning and sauce included. Regular dried noodles are cooked like pasta and used in stir-fries and soups where you build the flavour yourself.

What goes with noodles for dinner? Stir-fry the noodles with vegetables and egg, chicken or prawns, and lift the dish with soy sauce, sesame oil or a spoon of chili oil. A pack of noodles, three fridge staples and fifteen minutes is all it takes.
